The Apex Model Edge Pro is a patented system that will sharpen any size or shape blade (up to 3 ½” wide), including serrated knives. Knives can be sharpened at exactly the same angle every time, making re-sharpening so fast you will never work with a dull blade again. Our water stones have been custom formulated to free you from messy, gummed-up oil stones. They last a long time and are inexpensive to replace. The Apex will remove far less metal than electric sharpeners or grinders, eliminating wavy edges and adding to the life and performance of your knives.
The Apex removes nicks and dings without distorting the knife edge. It creates no heat, preserving the temper of your knives. It sets up in seconds on any smooth surface. No power required and comes with a convenient carrying case. Requires no maintenance other than routine cleaning.
Patented Knife guide system does not clamp the blade, so you can sharpen any length or shape blade up to 3 ½” wide. Adjustable sharpening angles, from 10, 15, 18, 21, and 24 degrees and infinitely in between.
Manufactured from the highest quality materials in Hood River, Oregon, US.

A patented system to keep knives sharp
Edge Pro knife sharpeners are more than just quality tools that will do the job. These knife sharpeners are the equivalent of taking your knife on a 3-day spa and yoga retreat, leaving them refreshed with a razor-sharp edge that is free from imperfections.
The patented knife guide system employed by Edge Pro is designed to provide your knife with the most consistent and tailored sharpening performance. This also helps to ensure that the blade does not shed more metal layers than is necessary to achieve a sharp edge.
Take your knife’s edge to the next level
The great benefit of the Edge Pro knife sharpening system is its ability to pack up light and compact. These knife sharpening kits don’t need to sacrifice quality in the name of portability and as a result, you’re able to get the very best performance out of your knife. Anytime. Anywhere.
Edge Pro knife sharpeners are made up of several different components, all of which can be purchased individually and chosen to further customise the knife sharpening performance of your kit. As an authorised Australian dealer of the products, Nebo Knives offers a selection of Edge Pro kits that can be bought as a complete set or purchased individually on an as-needed basis. The kits are made up of either the Apex Model or Pro Model Edge Pro sharpening system. Additionally, they are then bolstered by a varying selection of sharpening stones made up of different grit ratings.
How to use the Edge Pro Knife Sharpeners
Each of the Edge Pro Knife Sharpeners comes with a detailed set of instructions to make sure that you’re getting the most out of your knife sharpener, as well as treating your knife to the proper care and maintenance. If you’re looking at one of the Edge Pro Knife Sharpeners and you’re not sure exactly how it would work in practice, here’s a list of some of the basic steps to take.
Step 1: Preparation
Before you begin with the knife sharpening, make sure that all of the equipment that’s needed will be firmly secured and easily to hand when needed. This involves putting a very small amount of water on the table in order to aid the effectiveness of the suction cups at the bottom of the knife sharpener. Then lay the sharpening stones out as well.
Step 2: Attach the rod to the machine
Make sure that the rod which will hold the sharpening stones is attached to the base of the machine properly. Important to remember here is that it should be directly in line with the middle of the machine.
Step 3: Position the knife and stones
Place the knife on the machine with the spine facing away from you. The manual has guides on which stones and angles to use on different knife types.
Step 4: Begin Sharpening
Start sharpening the knife sliding the arm of the machine back and forth along the knife. Correct technique is to sharpen on the downstrokes (or when pushing the stone away from you) and glide on the way back up. Go from bump stop to bump stop and continue along the knife, repositioning as you go.
